Any suggestions on how to log data wirelessly? Instead of using SPI communication maybe use Bluetooth?

Do you plan to have the logger download data to your PC remotely?

You can look into Wi-Fi and one of the low-cost and popular Wi-Fi microchips is the ESP8266 (https://www.sparkfun.com/products/17146). Other alternatives can be Bluetooth, yes, and/or proprietary RF links.

There are many suggestions found on my research online on how to log data wirelessly. Here is a website found online on how to use Bluetooth to log data wirelessly. (www.windmill.co.uk/wireless.html)

Some companies (such as like Adafruit, Mouser, or Digikey) have various Radio Frequency (RF) receivers/transmitters available. If you were to implement one, the exact receiver/transmitter might vary depending on need. However, it is a plausible option to investigate.
